All of the other ingredients should be naturally gluten-free, but I would double check everything you use just to be sure.

Absolutely delicious! I added a cup of golden raisins also. It was sweet enough that I didn’t add the cream cheese icing! Will be using this recipe again!

I’ve never had any issues with it overflowing in 8-inch pans, the cake layers are just a little thicker.

My husband requested carrot cake for his 75th birthday. After looking at many recipes, I decided this looked like the best one to make. So happy I did.

I doubled the recipe and tripled the cream cheese icing. Four layers and probably 5 pounds! It was delicious. 20 people attended the dinner party and many said it was the best carrot cake they ever had.

I followed the directions exactly. Due to the size I had to whip up a third cream cheese just to cover it!
