In reply to Wendy Gerlock. I'm really not sure. Are you using a neutral oil, like canola or vegetable oil? If so, you could could cut back on it and replace 1/4 cup of the oil with an equal amount of applesauce or sour cream.

I love carrot cake however both times I have made it all I can taste is the oil any suggestions why?

This was such a very good recipe and cake. I made it for my birthday and shared it with friends. It was truly enjoyed and complimented on.
I’m so glad I chose this Carrot Cake recipe! I didn’t use raisins this time around but no one was the wiser!
Now my favorite cake recipe! Moist and substantial. Cream cheese frosting was just perfect. Not too sweet. Well worth the time and effort to make. Thank you for something sooo good!
