I followed your directions, except that I used a can of apple pie filling that I had on hand.  I mixed it with 3 fresh chopped apples without adding any spices.  The mini pies came out of the muffin tins easily and they taste great!   I will definitely do this again with all fresh apples.  Thank you for the recipe.

I really only use my mini cheesecake pan for mini cheesecakes. It would probably fine to use it for these pies, but keep in mind that the cavities are usually more narrow and a little deeper than a regular muffin pan so you may need to adjust the baking time.
